One of doctor advise after annual checkup is to reduce rice, find alternatives & you can guess the state of south indians. Below is the one of the recipe Dosa I came up towards meeting my health plan.
- Soak the below items for 6 - 8 hrs in a container
- Barley - 2cup
- Brown Rice - 1 cup
- Channa Dal - 2 Tbsp
- Urad Dal - 3/4 cup
- Whole Moong - 3/4 cup
- Quinoa - 1 cup
- Spelt - 1 cup
- Methi Seeds - 1 Tbsp
- Grind the above items into a smooth consistency by adding enough water
- Make sure to combine Rolled Oats - 1 cup at the time of grinding
- Let it ferment in a large enough bowl lightly covered, for about 6-8 hours in a warm place
- Add Salt for taste
- Now batter is ready
- Now fermented batter is ready to be placed on heated tawa
